1 lb ground turkey
2 shallots finely chopped
2 cups pre-cooked sweet mashed potatoes
1/3 cup fresh grated parmesan cheese
1 egg + 1/4 cup of egg whites
1 tbsp of chopped fresh parsley
1 tbsp of chopped fresh basil
salt and pepper to taste
Combine all ingredients in a bowl. The mix will be gooey but it’s delicious after cooking. Form them into patties. Pan fry with coconut cooking spray over low – medium heat on a good quality non stick pan/griddle. Fry until patties are golden and cooked though about 5-7 minutes per side. You could also grill them the same way instead of using a fry pan.
